For freezer dump meals, combine the raw ingredients in bags and freeze them until you are ready to place them in a slow cooker. In a few hours’ time, you and your family have a freshly-made meal. Here are ten meals you can put together quickly.
For ginger-peach chicken, mix two pounds of boneless skinless chicken pieces, 12 ounces of frozen peach slices, a sliced red onion, 2 tablespoons each of brown sugar and soy sauce, 2 teaspoons of ground coriander and a tablespoon of grated ginger. Pop it in your slow cooker on high for 4-5 hours and serve it with rice.
Also served with rice is chicken with apple and sweet potatoes. Add two diced and peeled sweet potatoes to a pound of cubed chicken, 2 minced garlic cloves, 1/2 cup of onion, a cup of applesauce, 1 tablespoon of curry powder, 1/2 teaspoon of ground ginger, 2 teaspoons of apple cider vinegar, salt and pepper. Cook it for 8 hours on low.
For beef fajitas, take 2 pounds of boneless beef chuck shoulder roast, a couple of sliced bell peppers, a sliced onion, 2 cloves of minced garlic, 1 tablespoon each of honey and chili powder, juice of 1 lime, 2 teaspoons of cumin, 1 of paprika and 1/4 teaspoon of crushed red pepper flakes. Cook it for 8 hours on low. A similar dish is shredded beef tacos. Mix 3 pounds of chuck roast with 2 teaspoons of chicken bouillon, 1/2 teaspoon each of cumin and garlic powder, 1.5 tablespoons of chili powder, salt and pepper. Cook 6-8 hours on low. For both dishes, shred the beef with a fork and eat with tortillas or taco shells, guacamole, sour cream.
Mix 24 ounces of diced red potatoes and 16 ounces of frozen corn for potato and corn chowder. Add a teaspoon each of thyme and oregano, a half teaspoon each of garlic powder and onion powder, salt, pepper, and 3 tablespoons of all purpose flour. Cook it with 6 cups of chicken stock for 8 hours on low. Add 1/4 cup of heavy cream and 2 tablespoons of butter, stir and serve with warm bread.
For beef stroganoff, freeze a pound each of sliced mushrooms and stew meat with a diced onion, 1/2 cup of apple juice, 2 tablespoons of beef stock base,1 teaspoon of pepper, 2 teaspoons of salt and 2 cloves of minced garlic. Cook it with a cup of water on high for 8 hours. Add a cup of sour cream, and serve over noodles or rice.
Chicken Alfredo takes 3 pounds of chicken, 8 ounces of cream cheese, 1 package of Italian dressing mix and 2 cans of cream of chicken soup. Cook it on low with 2 cups of water for 6-8 hours, and serve with fettuccine. Make meatballs for spaghetti with a bag of frozen meatballs added to 28 ounces of canned crushed tomatoes and two teaspoons of Italian seasoning. Cook 3-4 hours on high.
For split pea soup, dice 2 cups of bacon and a large yellow onion with a pound of dry split peas, a cup of celery, 2 cups of chopped carrots, 3 cloves of minced garlic, 1/2 teaspoon of thyme and two bay leaves. Cook it on low for 7-8 hours with 32 ounces of chicken broth and 2 cups of water.
For chicken noodle soup, freeze 1 pound of cubed chicken breasts, 1/2 pound of carrots, a cup of celery, a small diced yellow onion, a bay leaf, 1/4 teaspoon of pepper, and a teaspoon each of garlic powder, basil, and oregano. Cook on low for 6-8 hours with 8 cups of chicken broth. Add 8 ounces of wide egg noodles for 30 minutes.
